REST / Jquery repeating section to add List Item form Custom List

Hi

I am working on Custom list to add new item programmatically via REST/JQUERY which will allow arepeating sections such as 'Add More' for certain properties and when click 'SAVE' should save all the content. In this scenario, how do we create a field properties as we don't know how many add more sections users want.

We don't want to use InfoPath form as it will be depreciated near future. I am new to this and will you please throw me some POCs, code or example.
